Pecan Pie, Pumpkin Pie, Sweet potato pie, Chocolate cake, and banana pudding.

Growing up in a Southern home, I learned, from a very early age that desserts are the crown jewel of your holiday/dinner table.

Pecan Pie, Pumpkin Pie, Sweet potato pie, Chocolate cake, and banana pudding. Those were always the ones that graced my family. I was honestly only a fan of one and that was banana pudding. As I grew older I loved Pecan Pie and have grown quite fond of making Pumpkin Pie.

My mother would spend the entire evening making these pies from scratch-excluding pecan, (Pecan pie was always her Achilles heel. Pancakes are mine.) I would always help with the banana pudding and the chocolate meringue pie she would make. The smell of egg whites and powdered sugar. I always stood in front of the glass mixer slowly watching the egg white turn from a clear liquid substance to something that looked like a cloud. :

This dessert is for those who love banana pudding, but don't like bananas.

It would take a lot of time. Once I moved to a place of my own and began hostessing my dinner parties, I realized I loved to cook, but it felt like I didn't have the proper time. Between work, relationships, and just life in general. I had five people coming to my house. I had to make a banana pudding within an hour.

I decided my mom's recipe wouldn't be able to be executed with that little amount of time. I had to make my own. My mother's recipe called for the Banana pudding to be warm and to have meringue instead of whipped cream. She also used 3-6 bananas, depending on the size of the pudding she was cooking. The cook time alone and the fact I had to admit I loved bananas, but not in banana pudding served warm.

So my cooking journey began. I kept the Nilla wafer crust. I substituted the egg whites for fat-free whipped cream. Instead of making my pudding from scratch, I opted to use a Jell-o banana flavor instant pudding mix. Instead of using three bananas, I use 1.

Instead of heat, I slightly chill it and serve it layered with yummy Nilla wafer crust and dust crumbles. Another aspect of this recipe that I enjoy is that it is low in sugar so if you have insulin-related illnesses you can eat this dessert without feeling guilty or worrying about your blood sugar skyrocketing.

This recipe is great for those who love Banana pudding, but don't enjoy the texture of the bananas. I only use a single banana and slice it razor-thin, allowing it to melt into the pudding.

With the quick prep time of this recipe, I was able to make the Banana pudding and change my outfit before everyone arrived. After dinner, I served the dessert. Everyone had their own champagne flute of Banana Pudding. They loved it. My favorite compliment was that I must have worked extremely hard on it.

This dessert is still a favorite in my family. I hope yours enjoys it as well.
