This recipe is dedicated to those of us who are messy cooks. When I watch reality cooking shows on tv, I am often fascinated not just by the level of cooking, but at the plating. I was never taught how to plate and have always wanted to take a class-(Though I am not sure if they have those). With this recipe, you do not have to worry about plating, nor do you need to worry about making the ingredients perfect. It is exactly what it is named A big Ol' Mess.


A big ol' mess of sausage, bell pepper, onion and jalapeno drenched in sweet and sour sauce heaped over white rice. The only thing missing is a side of shrimp or a big Alaskan king crab and a cold beer. The name makes you want to roll up your sleeves and dig into what will be one of the messiest, but most delicious bbq sides you have eaten in your life.:

Why do I love it? Not only is it delicious, it is quick and easy to make. It is also foolproof. You can't overcook it. The flavors work together to make it an excellent dish. This recipe is great for Summertime but can be cooked whenever.

Down South BBQ : Big Ol' Mess Recipe


Ingredients


Big ol' mess recipe virtual shopping list


Written Ingredients:

  • 2-Green Bell Peppers

  • 1-Brown onion

  • 1-White onion

  • 1-Jalepeno (Optional)

  • 1-Garlic clove

  • 1-Bottle of sweet & Sour Sauce

  • 1-Teaspoon of Creole seasoning (optional)

  • 1-2-Hillshire Sausage

  • 1-Tablespoon of Barbecue Sauce

  • 3-4 cups of Minute Rice

  • Aluminum Foil


Prep Time: 10 Minutes

Cook Time: 35 Minutes


Cooking Directions


  1. Slice and de-seed bell peppers, Slice onions, Slice and de-seed Jalepeno, Crush and mince garlic clove. Slice Sausage.

  2. Take foil and place in casserole dish. Add first 8 ingredients into the foil.

  3. Use a spatula to gently mix sauce and seasoning in with the ingredients.

  4. Cover with foil. Put in oven at 425 for 25-35 minutes.

  5. The last ten minutes cook minute rice. Once the mess is ready, take it out, let it cool for 15 minutes and serve over rice.

*Serves 4-6


*Jalepeno and creole seasoning is optional. All based on your spice level.
