Serve a simple, yet elegant Easter dish this year...

Easter lets us know that Spring is here and we are moving into warmer weather. It is also that time of year when we become more busy with outdoor sports and family events. This Easter, I want to make your life a little less stressful by sharing these quick and easy recipes that will assist you in doing what we love to do most on this holiday, spend time with our family and loved ones.
This blog post includes my favorite sweet treat to make for the kiddos as well as a elegant Easter dinner your friends and family will be sure to remember for years to come.

Easter Dinner 2024
Dipp Dyed Marshmellow Recipe

Ingredients
Mini Muffin pan
Liquid food coloring (Variety Pack)
3 Cups of Water
1 box of Toothpicks
1 package of Large Marshmellows
2-3 Styrofoam or Egg cartons
Cooking Directions
In a mini muffin pan, dilute liquid food coloring with water.
Using a toothhpick, dip marshmellow into food coloring. Then, spin to shake off the excess.
Stick toothpick into styrofoam/ Egg carton back to allow marshmellow to dry.
Then move toothpick to other end.
Repeat dyeing and drying with remaining Marshmellows.
Apricot Mustard Ham Recipe

Ingredients
1 (8-10 lb.) fully cooked bone-in smoked half ham (not spiral sliced)
1 Cup packed brown sugar
1 Cup apricot jam
1 Cup spicy brown mustard
Cooking Directions
Preheat oven to 300F.
Place ham in a roasting pan, cut side down.
With the tip of a sharp knife, make long cuts from top of the ham to the bottom. Cut through the skin and the fat.
Cover with foil.
Bake 1 1/2 hours.
In a medium bowl whisk sugar, jam, mustard and 2 teaspoon of pepper.
Transfer 1 Cup glaze to seperate bowl; Cover and refridgerate.
Remove foil from ham. Brush remaining glaze all over ham.
Bake, uncovered, another 1 to 1 1/2 hours, or until glaze is dark brown and internal temp reads 140F.
Allow ham to rest at least 20 minutes before carving.
Serve with reserved glaze.
Quick Braised Spring Vegetables Recipe

Ingredients
1 Spring onion or 4 green onions, trimmed and sliced
2 garlic cloves, finely chopped
3 Tablespoon olive oil
3 Tablespoon low sodium chicken broth or water
8 oz. asparagus, trimmed and cut into 1 1/1 inch pieces
1 Cup shelled fresh fava beans, peeled, or sugar snap peas, trimmed and halved crosswise
1 Cup shelled fresh english peas, or frozen peas
1/2 head escarole, torn into bite-size pieces (About 2 Cups)
3 Cup lossely packed baby spinach leaves
1/2 Cup loosely packed fresh basil leaves
1 Tablespoon finely grated lemon peel
1 Tablespoon fresh lemon juice
1 Tablespoon finely chopped fresh chives
Parmesan cheese, for serving
Cooking Directions
In a heavy 12-inch skillet, combine spring onion, garlic, oil and broth.
Heat to simmering on medium heat.
Cover and cook about 2 minutes, or until onion softens slightly.
Add asparagus, fava beans and peas. Saute' 2-3 minutes, or until beans and peas are heated through.
Add escarole, spinach, and basil; saute' 2 to 3 minutes, or until escarole wilts and asparagus is crisp-tender.
Stir in lemon peel and juice.
Season to taste with kosher salt.
Transfer to serving platter; sprinkle with chives and parmesan.
Serve Immediately.
