Fish, for me, is an underrated protein. I find people only know the usual suspects. Cod, Halibut, Catfish, Talapia. There is a certain freedom that comes with being able to choose a protein and master it. Fish is one of the hardest proteins to master, not because it is complicated, but because it is light and you must have a light hand when seasoning or sauteeing it.
In my earlier cooking days, I dreaded cooking catfish, because I was so unsure of how to do it. All of my life my family had fried it beautifully and even then, I knew there was a special skill in frying catfish filets. I finally mustered up the courage and learned how to cook it. That gave me the confidence to experiment with more fish. Next, I cooked with Halibut, then rainbow trout, then a whole salmon.:

Throughout this fish-cooking journey, a few things stand out. The first is to have confidence in the fish you cook. Your confidence or lack thereof will shine through in the protein. Don't be afraid to cook it differently from what is expected. When you are confined to cooking a protein one way you lose out on the creativity that can be built upon.

Lime Baked Fish Recipe
Ingredients
1 lb. Fish Fillets *Your Choice Of Fish
4 Tablespoons Butter
1 Cup Lime Juice
Salt and pepper (to taste)
1/2 teaspoon dried Tarragon
1/2 teaspoon Chives
1/2 teaspoon Paprika
2 Limes, wedged
Cooking Directions
Place thinly sliced butter in baking pan place in over until melted, swirl to coat the pan.
Put the fish in the pan and drizzle lime juice over the fish
In a bowl combine the remaining ingredients and sprinkle over the fish.
Cover with foil, Bake at 350F degrees. 10-15 minutes.
Garnish with lime wedges if desired.
