So, when April 16th rolls around and it's officially National Eggs Benedict Day, you better believe we’re celebrating.


But around here at Good Thyme Gal, we like to make things feel a little more inclusive. Because let’s be honest—traditional Eggs Benedict can feel a bit... fussy. English muffins, poached eggs, hollandaise, maybe some Canadian bacon? That’s a whole production.

So today, I’m giving you my version: a flexible, affordable, equitable take on the brunch classic. We’re keeping all the comfort and flavor, but leaving the stress behind. Whether you're cooking in a full kitchen or making brunch magic with a toaster and a skillet, this recipe is for you.


🍳 What Even Is Eggs Benedict?

Traditionally, Eggs Benedict is a toasted English muffin topped with Canadian bacon, a poached egg, and hollandaise sauce. It's rich, indulgent, and has been winning brunch menus for over a century. But its exact origin? That’s still debated—some say it was created at New York’s Delmonico’s in the 1860s, others credit a hungover Wall Street broker in search of something comforting.

However it began, the message is clear: Eggs Benedict is comfort food disguised in elegance.

And guess what? You don’t need to go out to an overpriced café to enjoy it.


🥚 A More Equitable Eggs Benedict

What makes this version “equitable”? It’s built on principles of:

  • Affordability – Pantry-friendly ingredients, no specialty tools

  • Accessibility – Easily adaptable for dietary needs or what you’ve got on hand

  • Ease – No culinary school skills required

You can switch things up based on budget, availability, or taste—because brunch should be fun, not stressful.


🥬 Good Thyme Gal’s Equitable Eggs Benedict

A cozy brunch classic for all budgets and kitchens.Serves 2


Ingredients:

  • 2 slices whole grain bread, biscuit, or any bread you love

  • 2 eggs (or firm tofu for a plant-based version)

  • 1 tbsp vinegar (for poaching)

  • ½ avocado or sautéed greens (optional, but recommended)

  • Salt & pepper, to taste


Quick Yogurt Hollandaise:

  • ¼ cup plain Greek yogurt (or plant-based yogurt)

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 egg yolk (optional for richness)

  • Pinch of turmeric or paprika for color

  • Salt to taste

Instructions:

1. Make the sauce:Whisk yogurt, lemon juice, mustard, and optional egg yolk in a small saucepan over low heat. Stir constantly for 3–4 minutes until warmed and slightly thickened. Add salt and a pinch of turmeric or paprika for that signature yellow hue. Remove from heat.

2. Poach the eggs:Bring a saucepan of water to a gentle simmer and add vinegar. Crack an egg into a ramekin or small bowl, then gently slide it into the water. Cook for about 3 minutes. Repeat with the second egg. (Or fry them sunny side up for an even simpler method!)

3. Toast & assemble:Toast your bread slices. Top each with avocado or greens, add a poached egg, and spoon over your warm, tangy hollandaise.

4. Garnish & enjoy:Sprinkle with fresh herbs, chili flakes, or a little cracked pepper. Serve warm with fresh fruit or potatoes on the side if you’re feeling extra.
