According to legend, General George Washington’s troops were in desperate need of sustenance, and the cooks, using what little they had, created pepper pot soup. It was a lifesaver, nourishing the troops through a brutal winter and earning its nickname.

Caribbean influences are evident in the soup's bold flavors, featuring ingredients like black pepper, hearty vegetables, and sometimes tripe. A Simple and Affordable Pepper Pot Recipe

Ingredients:

  • 1 lb stewing beef or chicken (use bone-in for extra flavor)

  • 1 tbsp vegetable oil

  • 2 medium carrots, diced

  • 2 medium potatoes, peeled and cubed

  • 1 cup okra, sliced (optional)

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper (adjust to taste)

  • 1/2 tsp thyme

  • 6 cups beef or chicken broth

  • Salt to taste

  • Optional: dumplings made with a simple flour and water dough

Instructions:

  1. Brown the Meat: Heat the oil in a large pot over medium heat. Add the meat and brown it on all sides. Remove and set aside.

  2. Sauté Aromatics: In the same pot, sauté the onion and garlic until fragrant, about 2–3 minutes.

  3. Add Vegetables and Spices: Stir in the carrots, potatoes, greens, and optional okra. Sprinkle in the black pepper, paprika, cayenne, and thyme. Mix well to coat the vegetables in the spices.

  4. Simmer the Soup: Return the meat to the pot and pour in the broth. Bring to a boil, then reduce to a simmer. Cover and let cook for 45 minutes to an hour, until the meat is tender and the flavors are well blended.

  5. Optional Dumplings: If desired, drop small pieces of dough into the simmering soup during the last 15 minutes of cooking for hearty dumplings.

  6. Season to Taste: Adjust salt and pepper as needed before serving.
