What is a Sacher Torte?

sacher torte

The Sacher Torte (pronounced SAH-kur) is an iconic Austrian chocolate cake that originated in Vienna. Created in 1832 by 16-year-old apprentice chef Franz Sacher, this masterpiece was first made for Prince Wenzel von Metternich. With its rich chocolate sponge, a thin layer of apricot jam, and a glossy chocolate glaze, the Sacher Torte became an instant classic.

What makes this cake so special? It’s the balance of flavors—decadent yet not overly sweet. The tangy apricot jam provides a contrast to the dark chocolate layers, and the glossy ganache-like icing gives it a stunning finish. Traditionally, it’s served with a dollop of whipped cream to enhance its elegance.

While the original Sacher Torte is a closely guarded secret, this simplified version delivers all the rich flavor and elegance without too much fuss.

Ingredients

 For the Cake:

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup unsalted butter (room temperature)

  • 1/2 cup granulated sugar

  • 4 large eggs (separated)

  • 3/4 cup all-purpose flour

  • 1/2 teaspoon salt

For the Filling and Glaze:

  • 1/2 cup apricot jam (smooth, seedless)

  • 1 cup dark chocolate (chopped)

  • 1/2 cup heavy cream

Cooking Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line it with parchment paper.

  2. Melt the Chocolate: In a double boiler or microwave, melt the chocolate chips until smooth. Set aside to cool slightly.

  3. Mix the Batter: Cream the butter and sugar together until fluffy. Add the egg yolks one at a time, mixing well. Stir in the melted chocolate and fold in the flour and salt.

  4. Whip the Egg Whites: In a separate bowl, beat the egg whites until soft peaks form. Gently fold the whites into the batter, being careful not to deflate them.

  5. Bake: Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.

  6. Add the Jam: Warm the apricot jam slightly, then spread a thin layer over the top and sides of the cake. Let it set for a few minutes.

  7. Make the Glaze: Heat the heavy cream until steaming, then pour it over the chopped dark chocolate. Stir until smooth and glossy. Pour the glaze over the cake, spreading it evenly with a spatula.

  8. Set and Serve: Allow the glaze to set before slicing. Serve with whipped cream for the perfect finishing touch.
